1 pound Udon noodles
3 1/2 tablespoons dark toasted sesame oil
3 1/2 tablespoons black (light or lower sodium) soy sauce
1 1/2 tablespoons balsamic vinegar
2 tablespoons sugar
1 teaspoon salt
1 tablespoon hot chile-toasted sesame oil
1/2 teaspoon fresh fine-chopped garlic
1/3 cup fresh-sliced scallions
1 tablespoon toasted sesame seeds
Cook noodles as directed on package, drain and rinse to cool.
In separate bowl, combine the remainder of ingredients and mix well. Toss with noodles. Serve or cover and refrigerate.
Noodles can be used as a base for pasta salads with grilled or cooked chicken, beef, pork and vegetables, or as a side accompaniment.
Makes 6 servings.
